Ragda Patties By Chef Jigss

Today we are making one of the very popular Street Side Food –“CHAAT”  called “RAGDA PATTIES” . Ragada is prepared from dry white peas, which are soaked overnight and then pressure cooked. These peas are then cooked with green chilies, ginger and flavored with various spices. patties made of boiled potatoes , bread crumbs, green chillies are topped with ragda and garnished  with sweet & spicy chutneys, finely chopped onion, coriander leaves, crumpled puris and sev.
A dish people relish like anything can now enjoy at home without comprising on the taste yet get the best quality….

Ingredients

For The Ragda

  • 350 gms safed vatana (dried white peas)
  • 1 boiled potatoes ,smashed properly
  • 1/4 tsp turmeric powder (haldi)
  • 3-4 tsp ginger-green chilli paste,
  • ½ tbp sanchar (black-salt) {optional})
  • 2-3  tbps cooking oil
  • salt to taste
For The Patties

  • 750 gms  potatoes
  • ½ bowl coarsely powdered bread
  • 4-5 grinded green chillies
  • 1-2 tbps black pepper
  • 1-2 tbps roasted cumin seed powder
  • Salt to taste
  • arrowroot (paniphal) flour for dusting
  • Ghee for frying (or oil as preferred)  tastes BEST when made in Ghee but )
Tip: There will substantial difference in taste between patties fried in Ghee or Oil, I personally perfer Ghee as tastes BEST. If any one dont like Ghee may use Oil as well.

To Serve & Garnish

  • green chutney 
  • garlic chutney
  • khajur/ imli  chutney 
  • sev  
  • crumpled crisp puris
  • onions ,chopped
  • lemon to squeeze
  • coriander leaves chopped

Total Cooking Time: 80-90 mins

Serves : 5-6 people

Method 
Pre-preparation:

For Ragda

Soak the dried peas overnight (for 8-10 hrs)

Take the soaked dried peas drain and add ½ tps turmeric powder

Add approximately 3 to 4 cups of fresh water and pressure cook for 4 whistles or until the peas are soft.

For Patties

Wash potatoes and cut into two pcs

Boil them in pressure cooker (can boil along with dried peas)

 

Making Ragda

Add in all the other ingredients for the ragda adding more water if required, mix well.

IMG_20151004_163205Add mashed potatoes and mix well so that the gravy becomes thicker.

Simmer for 10 minutes and keep aside.

Making Patties :

Take Boiled potatoes, peel and Smash the potatoes.

Add the grinded green chills, roasted cumin seed powder, black pepper powder, coarsely powdered bread and salt, knead all the things together.

Divide into 14-16 equal portions of 1 ½ ” diameter circle to make a patty.

Dust the patty’s with arrowroot (paniphal) flour.

Shallow fry on a pan till the patties are golden brown and crisp.

place patties on a plate and pour the ragda over.

Top with all the chutneys. Sprinkle the sev, onions, crushed puris, coriander leave, lime juice on top & Serve immediately.
