We all are very much familiar with “JEERA ALOO” a very simple yet one of the most popular dishes. I have tried to give a slight twist and make is more interesting because of the ingredients used in this recipe which makes it more RICH, MILDLY TANGY & SPICY, hence I call it “ RAJWADI JEERA ALOO”…..
- 500 gms Potatoes (boiled and skin peeled) chopped
- 3-4 tbps Ghee
- 3-4 green chillies chopped
- 8-10 curry leaves
- Pinch of asafoetida
- ¼ – ½ tomato (optional)
- 1 tps cumin seeds
- 1 tps sesame seeds
- 3-4 cloves of garlic (peeled) (optional)
- Small pcs of ginger (optional)
- ½ tps red chilly powder
- ½ tps turmeric powder
- ½ tps coriander powder(optional)
- Pinch of sugar
- 2-3 tps chopped cashews
- 2-3 tps raisins
- 2-3 tps lemon juice
- Chopped fresh coriander leaves 3-4 tbps
Preparation Time : 10 Mins
Cooking Time 6-8 Mins
Serves : 4
Heat ghee in a pan and….
Add the cumin seeds, sesame seeds, curry leaves, green chillies, garlic cloves,tomato and asafoetida and stir fry for a few seconds.
Now, add the potatoes, red chilli powder, turmeric powder, coriander powder (optional), sugar, chopped fresh coriander and salt to it, mix well and cook for 2-3 mins.
Take it off the flame, add lime juice and mix well.
Garnish with fresh coriander leaves, cashews and serve hot.
Goes well with Indian Breads ie. rotis, parathas, etc..
