Here is the recipe for how to make Lakadiya Gathiya, my favorite version which is little spicy as it contains chilies along with garlic. It is an easy to make savory which can be served ANY TIME…
Preparation Time: 10 minutes
Cooking Time: 25-30 minutes
- Gram Flour (besan / chick pea flour) 2 cups
- Green Chilly (4-5 nos) + Garlic (8-10 cloves) Paste
- Red Chilli Powder
- 3-4 tps
- Turmeric Powder 1/4 tps
- Salt to taste
- Cooking Oil for deep frying
- Water (for dough) As required
Sieve the gram flour in a large bowl. Mix gram flour, green chilly + garlic paste, red chilli powder, turmeric powder,and salt in a bowl.
Knead dough by adding water. Dough should stiff.
Grease your hands using oil and smoothen the dough.
Take a handy Sev Machine (seviya machine). This machine comes with different type of moulds. Use a mould for thick sev (a mould with big holes) to make gathiya. Place mould at bottom in the machine and place dough in it. Close the machine tightly.
Heat oil in a frying pan or kadai over medium flame. When oil becomes hot, holding the machine over oil and turn handle of machine to force the dough through moulds. Move machine in circular motion over oil and turn handle continuously.
Fry strands of gram flour until they become light brown for around 2-3 minutes.
Remove gathia from oil and drain on kitchen paper. Do the same process for remaining dough.
Crispy Tikha Masala Lakadiya Gathiya is ready. Keep it in airtight container and store in a cool and dry place for 15–20 days.
