Rajasthani Gatta Curry By Chef Jigss

Rajasthani Gatta Curry is a very popular and traditional dish from Rajasthan. Being a dry climate state they have less availability of fresh vegetables, hence they use much of flours, grains and pulses.

Gatta curry is gramflour dumplings in curd cury. It is an integral part of the rajasthani thali  A dish very delicious and easy to prepare at home….




  • 1 C Besan / Channa flour
  • 1/2 C Water
  • 1 C Sour Yogurt
  • 1 tsp Coriander powder
  • 3/4 tsp Red Chilli powder
  • 1/4 tsp Turmeric Powder
  • 1/2 tsp Fennel Seeds (Sauf)
  • few pinches of Asafoetida
  • 3 tsp Oil Canola /Olive
  • Salt & Sugar to taste
  • A Pinch of Citric Acid if yogurt is not sour.

For tempering: 

  • 2 tsp oil / Ghee
  • 1/4 tsp Cumin Seeds
  • Few slitted, Dried Red Chilli
  • few pinches of Asafoetida


Preparation Time : 6-8 mins

Cooking Time : 15-17 mins

Serves : 2-3



For Gatta:


Mix besan while adding fennel seeds, 1/2 tsp salt, 1/2 tsp red chilly pwd,1/2 tsp. coriander powder and oil.



Make a stiff dough.


IMG_20151124_183254_edit Make 5-6 thin and long strips from this dough rolling between your palms



Put these strips in boiling water and cook for 5-7 minutes.



Once properly cooked,  turn off the flame and take out the strips from the water and keep the water aside for the curry.


Cut these gattas into small pieces and keep them aside..



For Curry:




Whisk curd & water now add, some salt, remaining red chilly powder,coriander pwd, turmeric powder, & citric acid. Mix well & bring it to boil.


Cook it for 5-7 minutes while stirring continuously….





Once the kadhi is boiling, . For tempering, heat oil, add jeera, dried slitted-red chilli. Pour this on he kadhi ( yogurt & water mixture).



Now add gattas and  Put to simmer & cook for another 5-7 minutes.



Sprinkle some chopped green coriander and mix



Serve hot with Roti / Rice.



You may go ahead and try in your kitchen
