RINGAN NO OLO (TRADITIONAL STYLE)- By Chef Jigss

Here we have a traditional winter special, easy to cook recipe of ringan no olo or called as baigan ka bharta but with a twist ie cooked in a traditional style. It is basically roasted eggplant curry. Enjoyed with Bajra(Millet) or Jowar(Sorghum or Mili)Roti or even normal Chapati’s. Also goes well with Rice. Very healthy and flavourful.

Believe me this traditional recipe is very easy to cook at home, try it once & I am sure you will love it …..

 

  Ingredients:

  • 750 gms Eggplant {Ringan} (medium-round one)
  • 1 cup Spring Onions (chopped)
  • ¾ cup Green Garlic (chopped)
  • ¼ cup Green chilies, chopped
  • ¾ cup Chopped Tomato
  • ½ – 3/4 cup Spring onion greens
  • ¼ tps cumin seeds
  • ¼ cup or 4-5 tps  sesame seeds
  • ½ – ¾  tsp Black Pepper Powder
  • Salt, to taste
  • 3-4 tbps chopped Green Coriander
  • 4-5 tbsp Ghee
  • Cooking Oil for greasing
**Tip#1 we are using ghee as in traditional  method since eggplant’s basic tendency is “hot” and ghee will help balance heat of eggplant. Here one can also use OIL or mixture of both as preferred. But without any doubt Tastes best in ghee .**

 

Total Cooking Time: 25-30 mins

Serves : 4-5

 

Method:

Apply little oil over eggplant on all sides of it.

Roast it on direct flame for around 10-15 mins or till properly roasted.

Peel the skin off.

Lightly mash it using hands or finely chop using a knife.

Heat ghee in a thick-bottomed pan and add cumin seeds in it.

Once it stops crackling, add chopped onions and spring onions into it. Saute it for 3-4 mins or until onions are soft.

Now add chopped tomatoes and mix well

Add green garlic, green chillies, sesame seeds t. Mix everything well and cook for 2-3 mins

Add Black Pepper powder and little chopped green coriander. Mix well

Now add smashed eggplant.

Mix well and Cook it uncovered for approx 5-7 mins.

Let is simmer on low flame for 2-3 mins

Garnish with chopped coriander and serve hot !!!

**Tip #2 : If Green Garlic and Green Onions are not available , you can use regular ones instead . 4-5 cloves of garlic (finely chopped) **
